Valorization of Holothurian Species Captured by the Galician Fleet Fishing in Grand Sole

Abstract

A través del proyecto HOLOGAL, financiado por la Xunta de Galicia y el Centro para el Desarrollo Tecnológico e Industrial (CDTI), se pretende conseguir el aprovechamiento integral de distintas especies de holoturias que hasta ahora eran descartadas por la flota gallega que faena en la zona del caladero Gran Sol y en el litoral Cantábrico noroeste, así como de las especies características de la costa gallega. El aprovechamiento tiene en cuenta todos los aspectos relacionados con la especie desde su captura hasta, el desarrollo de todas sus potencialidades como alimento con un alto grado de elaboración, o como fuente de componentes potencialmente beneficiosos para la salud, formulados en productos nutracéuticos. En lo que respecta a la captura sostenible del recurso, se ha estudiado la distribución y abundancia de las diferentes especies de holoturias, de cara a escoger aquellas en las que su explotación pueda ser sostenible. Así las especies Parastichopus regalis y Parastichopus tremulus demostraron ser más abundantes entre las recogidas por las flotas en Gran Sol y el litoral Cantábrico Noroeste, y la Holothuria forskali es la que aparece más abundante en la costa gallega. Se ha realizado la caracterización nutricional, físico-química, microbiológica, toxicológica y proteica de estas especies de pepino de mar, obteniendo resultados muy interesantes para la elaboración de distintos productos. Otra línea del proyecto acentúa el desarrollo del cultivo de las especies seleccionadas. Para ello se trabaja en dos líneas fundamentales, el cultivo en tanques en tierra y en bateas, en el medio marino. Hasta el momento se ha conseguido el desove de la especie Holothuria forskali, trabajando actualmente en el asentamiento larvario. De cara a la elaboración de productos basados en las especies capturadas para su aprovechamiento, el proyecto se enfoca en su utilización para el consumo humano, como nuevos alimentos o nuevos productos nutracéuticos.

The HOLOGAL project, which is funded by the Xunta de Galicia and the Centro para el Desarrollo Tecnológico e Industrial (CDTI), is aimed at getting the integral use of different holothurian species which until now have been discarded by the Galician fleet fishing in the Grand Sole area and the north-west Cantabrian coast, as well as the characteristic species present along the Galician coastline. The intended valorization covers every aspect related to the sea cucumber, from its capture up to the development of their full potential as high quality processed food, or as a source of components with potentially beneficial health effects through the formulation of nutraceuticals. With regard to the sustainable harvesting of this resource, the distribution and abundance of the different holothurian species has been studied with the aim of selecting those ones whose exploitation would be achieved in a sustainable way. Thus, obtained results revealed that Parasitochopus regalis and Parasitochopus tremulus are the most common caught species by the Galician fleet operating in the Grand Sole area and the northwest Cantabrian coast; whereas Holothuria forskali was proved to be the most abundant specie along the Galician coastline. The nutritional, physico-chemical, microbiological, toxicological and protein characterization of these sea cucumber species have been carried out, achieving interesting results for the elaboration of different products. Other working line of the project is focused on developing the cultivation of the selected holothurian species. For this purpose, two alternative farming methods are being addressed: the cultivation on rafts in the marine environment and on inland installations. So far, the spawning of Holothuria forskali was successfully achieved, while the larval settlement is now under progress. Concerning the use of caught species in the elaboration of holothurians-based products, HOLOGAL is centred on its use for human consumption through novel food products or nutraceuticals.
